That is such a fast and simple dinner however everybody will assume you’re so fancy💁♀️
Crispy and golden on the surface and mushy and chewy on the within. Sooooo who’s making Gnocchi this weekend?
1 bundle of gnocchi
Veggies of alternative (I used cherry tomatoes and zucchini)
2/Three cup pesto
1 tbsp olive oil
Salt & pepper
2 tbsp toasted pine nuts
Parmesan cheese and basil for topping
1. Coat gnocchi and veggies in olive oil, salt and peeper and 1 tbsp of pesto
2. Unfold evenly on a sheetpan and roast at 220°C for 20 minutes
3. Prime with extra pesto, pine nuts, Parmesan cheese & basil. 😊 .
